Bambito Estate sits in the Volcán highlands of Panama, at 1,660 to 1,800 metres. The Sittón family has farmed this land since the early 1900s, and it still feels like a family home. There's a wooden house built for snow that never comes, and family heirlooms like an old hand-built coffee pulper. Today the estate is run by Priscilla, who looks after the garden and is said to sing to her flowers, together with her son Ivan. Ivan is the fourth generation, and he was born in Singapore while his father worked there. The family started entering Best of Panama to learn the craft properly, and in 2021 they won 1st place for washed Geisha.

MAME Specialty Coffee

At Bambito, quality starts with the picking. Geisha is a very small share of the harvest, so its pickers are paid more to pick only perfectly ripe cherries. Each day's harvest is processed as its own batch. The coffee is always rested and never sold before September, because the family finds rested coffee tastes noticeably better. Ivan's ideal cup is delicate but never thin: floral and elegant, with real body.

We've worked with Bambito for four to five years and bring in the same coffees almost every year, and that consistency is what keeps us coming back. Their washed Geisha is the classic Bambito cup: delicate and floral, with more body than most Geishas. Their Yellow Catuai natural lets us show a juicy, easygoing side of Panama beyond Geisha.
