The coffee for this month was Caturra from La Riviera (1500 masl), located in Colombia, run by the producer Julio Cesar Madrid.

The coffee was aerobically co-fermentated with pineapple for 24 hours, then anaerobically with coconuts another 24 hours. The both periods of time are with bacteria and yeast, where active fermentations happened.

The same farm as the last month November, but completely different spin! Very Christmas like, lots of baked pineapple, toasted coconuts, bold sweetness and creamy mouthfeel.
